Pineapple Pico de Gallo

Try this on grilled fish, fish tacos, tacos al pastor, pork chops, grilled shrimp, blackened chicken, grilled teriyaki steak, etc.
Crisp and refreshing with a slightly spicy, sweet and sour kick.
Ingredients:
1 pineapple (cleaned, cored and diced)
1/2 red pepper (diced)
1/2 green pepper (diced)
1/2 red onion (diced)
1 jalapeño (diced and seeded-leave the seeds if you like more spice)
fresh cilantro (chopped-as much as you like)
juice of 1 lime
juice of 1/2 lemon
2 tablespoons sugar
Salt and black pepper to taste
- Mix all ingredients well and let sit (refrigerated) for at least 30 minutes before serving.
