Grilled Swordfish with Whipped Cilantro Lime Butter
This dish features swordfish lightly seasoned and rubbed with olive oil and a blend of Grilled Gamefish Spice and Brisket & Pepper Steak Rub. Topped with a silky butter whipped with chopped fresh cilantro, lime juice and All Purpose Steak & Burger Seasoning, it offers a perfect balance of savory and zest. Ingredients:
- 2 swordfish steaks, olive oil, 50/50 mix of Grilled Gamefish Spice and Brisket & Pepper Steak Rub
- 4 tablespoons butter, a pinch of Patio Grill Master All Purpose Steak & Burger Seasoning, cilantro, lime juice
- 1 cup roasted corn, 1/2 cup cooked black beans, 1/2 cup roasted tiny tomatoes
- 1/4 cup chopped red onion, fresh cilantro, lemon juice, salt, and pepper
- 1/2 cup corn tortilla crisps
Instructions:
- Place softened butter, All Purpose seasoning, cilantro, and lime juice in a mixer and whip until light and airy.
- Coat swordfish steaks in olive oil and lightly sprinkle with the Gamefish and Brisket seasoning mix.
- Grill swordfish over medium-high heat for approximately 5 minutes per side until finished.
- In a pan, quickly sauté the corn, beans, tomatoes, red onion, and cilantro with lemon juice, salt, and pepper until just warm and softened.
5. Plate the fish with a scoop of whipped butter and serve alongside the warm sautéed salad and tortilla crisps.
